The Dam Shop at the Elk Rapids Marina is growing and we're looking for year-round team players & Summer Seasonal Line Cooks who bring energy, enthusiasm and a willingness to learn & grow with our business. The Dam Shop is open year-round at the Elk Rapids Marina on Elk Lake. We are looking for line cooks for our DAM Food Truck. Line cooks may also be utilized in our prep kitchen and for special events. Previous kitchen experience a plus, but we will train the right candidate.
This position is hourly + tips, we also pay a Summer Bonus (details given upon hire)
Responsibilities include, but are not limited to:
- Cook and prepare a variety of food products including meats, poultry, vegetables, sauces, stocks, breads and other food products using a variety of equipment and utensils. During your shift you may be required to take direction from either the manager in charge or your peers. At times, a “non-manager”, such as a kitchen lead, may be leading and you will be expected to follow their direction.
- Complete opening and closing checklists.
- Refer to Daily Prep List at the start of each shift for assigned duties.
- Prepares a variety of meats, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
- Understands and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
- Portions food products prior to cooking according to standard portion sizes and recipe specifications.
- Maintains a clean and sanitary work station area including tables, shelves, walls grills, fryers, broasters flat top range and refrigeration equipment.
- Closes the Food Truck & Prep Kitchen properly and follows the closing checklist for all stations. Assists others in closing the shop.
- Attends all scheduled employee meetings and brings suggestions for improvement.
- Promptly reports equipment and food quality problems to manager.
- Inform Kitchen Manager immediately of product shortages, uses appropriate lists to document/
- Uses our Standard Recipe Sheets/Books for preparing all products. Does not rely on the memory.
- Takes pride in quality and accuracy of products served.
- Be ready and willing to assist dishwashers or line cooks as needed.
- Maintain the freshness of all food supplies, rotating old ones out as needed.
- Store food items at the appropriate temperatures, properly clean cooking equipment after use, and ensure that the kitchen is pristine at the end of each shift.
- Accommodate any dietary restrictions as requested.
- Adhere to health and safety standards, cleaning the kitchen frequently and practicing good personal hygiene.
Skills and Qualifications

- Familiarity with standard equipment, ingredients, and recipes.
- The ability to adapt to a busy kitchen environment while working closely with shop staff.
- The ability to work on your feet for most of the day and lift 50 pounds at a time & physical stamina
- Ability to work in a fast paced environment, preforming multiple tasks simultaneously
- High personal hygiene standards
- Self-Motivated
- Ability to read and understand Standardized Recipes
- Serve safe Certified a plus, not required'
